Gourmet Macaroni and Cheese

This is one of our most favorite meals. It's so rich and creamy, and the toasted bread on the top just makes it better. It's certainly not the most healthy meal, so unfortunately we don't eat it very often.

1 stick (salted) butter
6 slices bread, torn
5 1/2 cups milk
1/2 cup flour
2 teaspoons salt
1/4 teaspoon nutmeg
1/4 teaspoon ground black pepper
1/4 teaspoon cayenne pepper
4 1/2 cups grated white cheddar
1 1/4 cups grated Parmesan
1 lb. dried macaroni (or other small noodle of your choosing :)

Heat oven to 375. Butter pan. Melt 2 tablespoons butter and pour over bread pieces in bowl and set aside.

Start cooking macaroni noodles according to package directions (less 2-3 minutes). Drain and rinse in cold water.

Heat milk to get hot without scalding.

In saucepan melt remaining butter over medium heat. When butter bubbles add flour a little at a time and cook, wisking for 1 minute. Pour in hot milk and continue cooking until thick. Remove from heat. Stir in salt, nutmeg, cayenne, and pepper. Stir in 3/4 of cheeses (reserve 1/4 and set aside). Stir in noodles with cheese sauce, pour into 9x13 pan. Sprinkle with remaining cheese and top with bread. Cook 30 minutes. Cool for 5 minutes. Serves 12 (but we give ourselves 2 servings, because it's so yummy, so it's more like 6 servings for us).
